Baked Doves
Ingredients:
- 8-10 doves
- Flour, salt and pepper
- 6 tbsp. butter, divided
- 2 tbsp. flour
- 2/3 c. chicken broth or stock
- 1 tsp. Worcestershire sauce
- 1 tsp. onion juice
Preparation:
Dust doves with seasoned flour. Melt 4 tablespoons butter in a skillet. Place doves, breast side down, in skillet and brown on both sides. Remove doves from skillet and place in a deep casserole.
Melt 2 more tablespoons butter in skillet and stir in flour. Add chicken broth gradually, stirring constantly. Cook for a few minutes and then stir in Worcestershire sauce and onion juice. Salt and pepper the gravy to taste.
Pour gravy over doves; cover casserole and bake in a preheated 325 degree oven for about 1 hour or until tender. Baste frequently with sauce, adding more broth if needed.
