Dove En Papillote
- 5 or 6 dove or quail
- Salt
- Pepper
- 1 large onion, chopped
- Parsley, chopped
- Onion tops, chopped
- 1 bell peppers, chopped
- 3/4 lbs. of sausage
- 6 bacon strips
- Cooking sherry
Clean birds and season well with salt and pepper. Fill cavities with onion, parsley, onion tops and bell pepper. Cut sausage into small pieces and add this to bird's cavities. Wrap birds with bacon strips and bake at 375 degrees for 60 to 65 minutes, applying sherry sparingly over birds very 15 minutes.
