Brochet de Palomas
Preparation:
Marinate fillets in sweet pickle juice or Italian salad dressing in the refrigerator for several hours. Place a slice of cheese on the fillet. Wrap fillet and cheese tightly with a bacon strip and pin with a skewer. Skewer fresh or pickled jalapeno pickle slice. Skewer fresh onion slice. repeat this sequence until all fillets are used. Grill slowly over mesquite coals until bacon is crispy brown. Serve with hot bread, salad, and cold beverage.
