Dove A La Plaquemine

Preparation:
In a large pot, put chopped celery, onions, garlic, shallots, parsley and butter. While ingredients are simmering over low fire, salt, pepper, and cayenne the doves. Stuff each dove with a half slice bacon. Place doves in pot. Add both cans of mushrooms with juice, the can of consommé, and bay leaf. Cover and cook on low fire for 1 3/4 hours. Additional seasonings may be added as desired. Remove cover and thicken gravy with flour. Serve over rice. |
